We purchase only fresh fish that have been carefully selected by professionals at the Oita Fish Market and killed that morning.In order to maintain freshness, we use a special technique to remove the nerves from all of our fish.We have created a logistics system that ensures that sushi arrives in stores before opening time, and in order to provide customers with the freshest sushi possible, we strictly cut the toppings in small batches at our stores.

If you're particular about the toppings, you should also be particular about the rice!

All of our rice is made using locally grown rice, delivered directly from contracted farmers in Oita Prefecture.Of course, the rice is made without any chemical additives, and is seasoned with additive-free vinegar and natural dashi stock, giving it a deep flavor that goes perfectly with fish.We are particular about cooking the rice in-house every day, so the freshness of our sushi rice is second to none!
